The Crystals Nurtured by the Sea and Mountains: Salt and Water
At Restaurant Présage, we believe that salt and water are the most important elements in
cooking.
While it’s only natural to be particular about and explore ingredients, we’ve returned to the
basics to reconsider: What is cooking? What does it mean to eat? What does it mean to express
the land through food?
Here in Karatsu, we have spent our days facing nature and ingredients, reflecting on these
questions.
In this place, distanced from the city and closer to ingredients, concepts like "local
production for local consumption," "terroir," or "farm-to-table" are not just phrases, but
seamlessly integrated into everyday life.
A river is born from the mountains and flows down, eventually becoming the sea.
The sea creates clouds, which return as rain to the mountains.
Plants, animals, insects, and humans alike are nurtured and sustained within this cycle.
May this cycle continue across generations, far into the future.

After working at a French restaurant in Tokyo, I moved to France, where I stayed for about eight years, honing my skills at Michelin three-star restaurants in Southern France, Alsace, and Paris.
Afterward, I further refined my craft at Blue Hill in the suburbs of New York.
Upon returning to Japan, I worked as a chef in Tokyo and Setoda, where my cuisine received high praise and was featured in restaurant guides such as Gault & Millau.
I create dishes that are not bound by specific genres, based on the unique qualities of each region.
In May 2024, I opened "Restaurant Présage" as the owner-chef in Karatsu City, Saga Prefecture.
COURSES
At Présage, we offer only a course menu crafted by the chef.
The dishes are created using seasonal ingredients that showcase the blessings of the local sea
and mountains of Karatsu, and the menu is designed daily to reflect the best of what the season
has to offer.
